Take 5 Jazz™ Stir-Fry

A stir-fry rustled up from readily available ingredients including 5 veg and the versatile Jazz™ apple, that takes just 5 minutes to prep and 5 minutes to cook! Serves 2.

Ingredients
A good slug of groundnut oil
Thumb-sized piece of fresh root ginger, peeled and cut into slivers or grated
1 medium parsnip, peeled cut into fine strips
1 celery stick, cut into fine strips
6 spring onions, trimmed and sliced
2 handfuls (about 60g) frozen/thawed Soya beans
1 Jazz™ apple, cut into quarters, cored and cut into thinner wedges
About an eighth of a smaller winter cabbage or a head of spring greens, shredded
Salt and freshly ground black pepper
1 tbsp toasted pine nuts
Ready prepared basmati and wild rice for serving

Directions
1. Heat the oil in a wok or large frying pan with the ginger, parsnip, and celery strips and fry over a medium heat for 3 minutes, stirring occasionally.

2. Add the spring onions, beans, Jazz™ apple wedges, and shredded cabbage and stir fry another couple of minutes or until the parsnip is just tender. Sprinkle with pine nuts for serving.

To give the dish an authentic Chinese kick try adding a few dashes of sherry and soy sauce.
